THE KEY STONE GARDEN in Misato-town, Kumamoto.
The origin of the name, “THE KEYSTONE GARDEN”.
First, I’d like to explain about the word, “keystone”.
When building a stone bridge, first thing to do is to assemble a strong wooden frame(called 支保工(Shihokou)) and put stones one by one from the sides.
The last stone, which will be placed in the centre of it, is called “要石(Kaname ishi, means keystone)”. If a keystone is placed properly, even after taking out the frame, only the arch will stand. Usually, most stone bridges have 壁石(kabeishi, means wall stones) which are piled up along the arch to strengthen the bridge.
When I visited 石匠館(Sekishoukan, means stone bridge museum) in Yatsushiro, the attendant lady showed how to place stones and take out the frame using the wooden miniature. I learned how important it is to be precise with processing stones and assembling a frame.

Stone bridges are blood, sweat and tears of people who were involved them.

The owner used to live in Tokyo but after 2011 Tohoku earthquake, he moved to 美里町(Misato-cho, means Misato-town) where Reidaikyo bridge stands.
He was attracted by the beautiful nature and opened this restaurant.
THE KEYSTONE GARDEN uses selective organic ingredients.
They use organic vegetable, fruits and grind flour by water mills and don’t use additives at all.
During lunch time, you can enjoy course lunch, deer burger set, etc.
They grill meat with firewood so that you’ll enjoy aromatic and dramatic cuisine.
